Bare Feet on Grass

I went to my parent's house today after work. My car needed to be worked on for an issue that was predicted would probably happen. Something with the wheel or axle... nevertheless,
it's fixed now and hopefully my little Subaru will keep moving along. While I was waiting,
I had a chance before the rain came to just walk through the grass with my bare feet. I thought I had better enjoy the feeling of grass between my toes before it was too late. It felt lovely. I know that the winter will soon be upon us, so I don't want to take these last few days of summer for granted. I captured a couple of pics of the last of the roses, and berries and tomatoes. And I watched as the rain clouds rolled in. I just needed to be outside and enjoy these fleeting moments, even though it is hot and sticky, I will soak it in before it is no more.

Holy Cheeseburger!

I found this recipe in a Rachael Ray magazine and I thought I would give it a whirl. However, I changed a few ingredients. Instead of ground beef I used ground turkey and I swapped out regular cream cheese for low-fat cream cheese. I also used Ginger-Wasabi dressing as the main condiment and a dab of Dijon mustard. The results: AMAZING!

Inside-Out Cheeseburgers

Ingredients:
1/2 cup crumbled blue cheese (2 to 3 ounces)
2 ounces low-fat cream cheese
2 tablespoons chopped flat-leaf parsley
1 1/2 pounds ground turkey
Salt, pepper and crushed red pepper flakes
2 tablespoons vegetable oil
2 tablespoons butter
4 hamburger buns
Condiments of choice, for serving

1. In a small bowl, using a fork, mash together the blue cheese and cream cheese until smooth. Stir in the parsley. Divide the mixture into 4 disks about 1 1/2 inches across. Cover tightly with plastic wrap and refrigerate for at least 20 minutes.
2. In a large bowl, season the beef with salt and pepper and mix well. Form into 4 equally sized patties about 3/4 inch thick.
3. Form a deep cavity in the center of each beef patty. Place a cheese disk in each cavity and pull the meat together to completely cover the cheese.
4. In a large skillet, heat the oil and butter over medium-high heat. Add the burgers and cook, about 4 minutes on each side for medium. Serve on the buns with condiments of choice.

something strange

If you have never have used http://www.futureme.org/ I would highly recommend it! The premise is that you send a letter to yourself into the future. It is really fun, especially if some time has passed and you find yourself in a different place then you were before. Such is the case of a FutureMe e-mail I received today! And today of all days! All my friends know why today is significant so I won't get into it... Anyway, I am in utter shock over this e-mail from the past! Almost everything in my life is different then where i was a year ago! I really challenged myself to hopefully to be living a better and more fulfilling life. And really, I am! I am not who I was, and I am in a much better place then before. Overall this has been a pretty good year, with one really crappy thing that happened. But if that crappy event didn't happen, I wouldn't be where I am at now. So everything worked out as it was supposed to. Now I will go send myself another future e-mail to this time next year... and I am anticipating a even better life this time next year! I am living my destiny...

Family Fun





Today I went out to my parent's place to visit and to also see my Grandpa Joe, and my Aunt Sandy. Grandpa Joe was down from Breezy Point in his new deluxe mini-van. And Sandy was in town for a short visit before heading back to Illinois, where she does her radiation treatments for her cancer. I honestly have to say that she is one person who didn't let cancer beat her. She actually enjoys going to her treatments and not only that she is now teaching art classes at the treatment center! She is a real hero in my book. Sandy and my Grandpa are very talented artists. Sandy paints and draws and so does my Grandpa. He actually has a few murals around MN and also in Arizona! And to top that off my Grandpa is a musician who still plays in the band! He plays drums, trombone & trumpet and probably won't stop until he physically can't play anymore! Oh and did I mention he is 87!


So family day consisted of going to see Sandy & Mike's new house and then lunch at Applebees to celebrate any early birthday for my mom. Later we went back to the ranch and I enjoyed playing with the newest litter of Shi-chon puppies! They are so adorably cute! And I also played with the cats and dogs, which are cute and fun too! Currently my parents have about 15 horses, 8 dogs, 4 puppies, 2 cats and 2 birds; one of which i am currently bird sitting until my parent's home is ready to move back into!



We had a great time playing a dice game and then watching my brother's favorite movie: Sister Act! He has probably seen it over 200 hundred times, and yet we watched it again!!! It was nice to be with the family and just chill and relax! The house is coming along, with new tresses already up! They are on their way, and my mom is hoping that it will be finished by Thanksgiving, so she can host it in her new and improved house. We'll keep our fingers crossed!
